Mung beans are known as 'green soybeans', and they have become popular in recent years due to their nutritional properties. In this recipe for green soybean or mung bean soup you will find a healthy and delicious dinner for children.

This recipe is suitable for vegetarian diets, it is a light dish full of nutrients. Green soybeans contain a lot of protein, fiber and omega 3, as well as vitamins and minerals. In addition, it is a suitable dish for celiacs.

  • 400 gr. green soybeans (mung beans)
  • 2 tomatoes
  • 3 carrots
  • 1 leek
  • 2 cloves of garlic
  • 1l. of water or broth
  • Olive oil
  • Black pepper
  • Salt

1. The night before, let the green soybeans soak, drain well before starting to make the soup.

2. Wash and chop the vegetables, peeling the carrot first. Cut it all into small cubes, you can leave the garlic whole and remove it later or cut it very finely.

3. Put water or vegetable broth in a pot over high heat, when it starts to boil add the soybeans and cook for about 15 minutes.

4. Add the tomatoes, carrots, garlic and leek to the casserole.

5. Let it cook together until the vegetables are tender, for about 20 minutes. Add a dash of oil and season to taste before serving.
