Snack time is one of the most delicate moments when it comes to having a balanced diet in the family. As children often claim it when they leave school, we must give them healthy recipes such as carrot pancakes.
This recipe for children is very quick to prepare, we can have the dough ready and make them at the moment. In addition, they can be accompanied by the sweet you like the most, such as chocolate syrup, caramel or cream.
- 700 gr. carrots
- 200 ml. milk
- 100 gr. of sugar
- 250 gr. Of flour
Tips: You may need to vary the ratio of flour and milk, as some brands absorb more liquid than others. They are delicious if you accompany them with syrup or even with whipped cream.
1. Wash and peel the carrots, grate them or cut them into pieces. Put plenty of water in a pot over high heat. When it comes to a boil, cook the carrots for about 15 minutes, until they are soft.
2. In a bowl, mix the flour with the sugar, add the milk little by little until it forms a dough. Add the grated and cooked carrot (if you have cut it into pieces, mash it with a fork), and mix well.
3. Pour a little oil in a small frying pan. When it's hot, spoon the batter in until it covers the bottom. Leave until the surface is no longer liquid and turn the pan. Leave a couple of minutes and take out the pancakes.
4. You can accompany the syrup pancakes of the flavor you like best, cream or simply sprinkle them with icing sugar.
